Our sommelier team prioritizes provenance, vintage character, and aging potential, often acquiring wines directly from wineries. We build vertical selections of Penfolds Grange, seek out single-vineyard expressions, and hold regular tastings with winemakers to understand each release before it joins the cellar.

A curated archive of Australian winemaking excellence
Each bottle is a chapter in Australia's winemaking story, selected for its ability to transport the drinker.
Our cellar is a curated archive of Australian winemaking excellence, built over decades with a singular focus on rarity and provenance. The collection is anchored by rare Penfolds releases and Australian icons, but it also reaches beyond our shores to include select Old World rarities that complement the national story.
Direct relationships with top wineries allow us to secure limited allocations and back vintages that rarely appear on restaurant lists. Every bottle is stored under precise cellar conditions — maintained at 12–14°C and 70% humidity — so that each pour arrives at the table exactly as the winemaker intended.
How our sommeliers select wines
The cellar is maintained at optimal conditions, with a digital inventory system tracking each bottle's provenance and peak drinking window. Temperature is held at 12–14°C, humidity at 70%, and every bottle is stored horizontally to keep corks moist and seals intact.
Sommeliers guide guests through the list with tailored recommendations, offering rare pours by the glass from our Coravin system. Personalized tasting flights and cellar tours are available, allowing visitors to explore the collection without committing to a full bottle.
The pillars of our cellar
A comprehensive collection of Penfolds icons, including Grange, Bin 707, and St Henri, with multiple vintages. Grange verticals from the 1980s to current releases sit alongside Bin 707 Cabernet Sauvignon and St Henri Shiraz, offering a rare depth of South Australian winemaking history.
Rare bottlings from Henschke, Torbreck, and Bass Phillip, representing the pinnacle of Australian terroir. Henschke Hill of Grace, Torbreck The Laird, and Bass Phillip Reserve Pinot Noir are among the most sought-after expressions in the country, and we hold select vintages in limited quantities.
A curated selection of Bordeaux, Burgundy, and Champagne to complement the Australian focus. First Growth Bordeaux, Grand Cru Burgundy, and vintage Champagne provide a counterpoint to the national collection, offering guests a broader perspective on fine wine.
Penfolds Grange Vertical
Our Grange vertical spans over three decades, offering a rare opportunity to taste the evolution of Australia's most iconic wine. Vintages from 1986 to 2016 are available, with limited pours by the glass via Coravin and detailed tasting notes from our sommelier team.
